Maid-Rite
2 lbs. hamburger
1/2 onion
1 small can chicken broth
salt & pepper
garlic powder
Brown the hamburger and drain/rinse. Put into a slow cooker along with 1/2 minced onion, chicken broth, and seasonings. Set on low and let it cook for at least 4 hours.
*For small group I made it with 5 lbs of burger, then I doubled everything else. With the seasonings, I just added it until it had some flavor. It takes quite a bit of seasoning. I let ours cook all day while we were at work.
Green Chili Rice
1 C raw rice
1/2 lb. jack cheese
2 C sour cream
1- 6 oz. can peeled green chilis (drained) or fresh depending on what you like
1/2 C grated cheddar cheese
Cook rice. Combine all ingredients including jack cheese except cheddar cheese. Put cheddar cheese on top. Bake at 350 degrees for 30 min.
*I doubled this recipe for small group.

Bubble Pizza
Bubble Pizza
2 tubes of biscuits
1 jar of pizza sauce
Toppings of our choice- if vegetables like green pepper and onion put on top of cheese
1 package of shredded mozzarella/cheddar cheese mix
Cut each biscuit into fourths. Place into a greased 9X13 pan. Pour sauce over biscuits. Place toppings on and then add cheese. Bake at 350 degrees for 30 minutes.

Cheesy Hash Browns
Cheesy hash browns
1 can of cream of chicken
1 can of cream of celery
1 8 oz. package sour cream
1 package shredded cheddar
1- 32 oz. bag of hash browns
Salt & pepper to taste
Mix everything together but save some cheese to sprinkle on top. Put into greased 9X13 pan and cook at 350 degrees for 1- 1 ½ hours or until it’s golden brown.

Meatloaf
Meatloaf
2 lbs. ground beef
¾ -1 package of saltine crackers
1 egg (or add some milk if no egg)
salt & pepper to taste
2 tsp garlic powder
2 tsp onion powder
½ C ketchup
Glaze
¼ C brown sugar
1 tsp mustard
¾ C ketchup
Mix together ingredients with hands and place into a greased baking dish. Mix together glaze and pour over the top- spread evenly. Bake at 350 degrees for 1 hour or until finished. Drain the grease when finish cooking.
**** I usually don’t measure when I make this, so I just came up with what I thought would be about the right amount. You can play around with it if you think it’s too much or too little. It always seems to turn out a little differently every time.

Pumpkin Bars
Pumpkin Bars
2 C flour
2 tsp baking power
1 tsp. soda
2 tsp. cinnamon
2 C sugar
4 eggs
2 C canned pumpkin
1 C salad oil
Put dry ingredients in a bowl. Add eggs, pumpkin, and oil. Mix well, pour into 2, 9X13 pans or 1 sheet cake pan. Bake at 350 degrees for 25 minutes.
Cream Cheese Frosting
8 ounce package of cream cheese
¾ stick of butter
1 tsp milk
1 tsp vanilla
1 ¾ C powdered sugar.
Blend together.

Spanish Chicken
Spanish Chicken
1 fryer, boiled (save broth)
1 8oz. sour cream
1 can Rotel tomatoes with green chiles, chopped (reserve small amt.)
1 sm. can green chilies, chopped
1 stick butter
1 small onion, diced (I sometimes saute' in butter)
1 pkg. corn tortillas
1 to 2 cups grated cheese
2 cans cr. of chicken soup
After chicken cools, tear or cut into pieces. Add Rotel ( save out about 3 Tbls.), soup, onion, sour cream, chilies in a large bowl or pan. Pour melted butter & reserved Rotel in the bottom of a 9 X 13 baking dish. Dip tortillas in chicken broth to soften, they soften quickly, (can use buillion cube if you don't have broth). Line pan with tortillas. (If you have enough of the chicken mixture, you may want to make another layer (tortillas, then mixture). Top with cheese & heat 350 for 20 to 30 min.
I tripled this recipe for our dinner last night. I also used boneless chicken thighs instead of fryers....
